estate gin?

Despite everything that our digitised, globalised, want-it-yesterday world says, some things just can’t be rushed. We like that. And that’s how we make Jawbox.

Despite everything that our digitised, globalised, want-it-yesterday world says, some things just can’t be rushed. We like that. And that’s how we make Jawbox.

We start by going back further – all the way to the grain itself.

Yes, we grow and harvest it ourselves on the 300 acre Echlinville Estate.
And we use our own water.
And using the grain we distill our own spirit.

You see, having control over the process gives us control over the product.

That’s what gives our gin its unique character and makes it Ireland’s first and only single estate gin.

We carry that approach right through to the way we present Jawbox. Even the imagery we use is made the hard way – using a painstaking historical technique called wet plate photography.

It’s tricky, and requires numerous precise chemical processes to be carried out successfully in sequence.  But the results are worth it: faces are rendered in extraordinary richness and honesty of detail.

So, yes, we haven’t taken the easy route. But, we're sure you’ll agree, the journey’s worth it.
